My kids all ate zucchini tonight

And no one complained about it.  When ASKED, they all said something along the lines of "well...it wasn't my favorite..." but they did all eat it!  Thanks to my friend Julie for the recipe!

Oh, and of course we had to have bread and apple butter, too...oh, and apple pie for dessert :)

Zucchini Casserole

4-5 small zuchini , shredded to make 4-5 Cups

one large onion, shredded

1 1/2 Cups shredded sharp cheddar-(can add a bit of mozzarella, too)

2 eggs, beaten

1-2 teaspoons of Italian Seasoning

salt and pepper

Place all in a greased shallow pan Bake at 350 for 40 minutes, covered.   Uncover and bake  another 20 minutes at 400.  It may need to bake a bit longer to get rid of some of the water/moisture.

Ah, cover it in cheese and they'll eat it! ;)
