Climbing The Tree

Since the tree is on its way down, the kids decided today would be a good day to climb it one last (or first for a couple of them!) time!

Now, for any of you wondering why Caleb isn't pictured in any of the photos from today...HE is on his senior band trip...to New York City!

We had a text from him earlier today saying they had just checked into their hotel, and were headed out to the Empire State Building.  They left last night at 9, and arrived around 5 pm or so today.  Sure hope they have a GREAT time!

Our across the street neighbors, Glenn and Alice, got a new puppy.  We had to take a break in our day to go and visit with him --er---them.  The puppy's name is Jake.

A Spring Work Day

Our HUGE tree in the back yard is dying.  Last year, the top center never got any leaves on it.  Gary, from church, and his friend Jim came today to begin working on getting that monster of a tree cut down.  They made good progress, but there is still much work to be done!  It was tough work because the tree hangs over our house a long ways, as well as hanging very far over our neighbor's house.  It's a big job!

they had to get creative with some rope and chain to "help" some of the branches down so that they wouldn't fall on our roof or the neighbors'!

Band Events

With springtime comes all kinds of spring concerts at school.  A couple of weeks ago, the Jazz band performed at Hudson at the Jazz band contest.  Thanks to Laure B for the photo!

a music professor (Doctor, I think!) from Wartburg came to the Middle School to listen to and critique each of the bands and give them tips on how to improve before the Parade of Bands.  Rachel's band played "Smoke on the Water", a 70's medley, and songs from "Mama Mia!"  They performed the same songs at the Parade of Bands this week.  They sounded great!

Caleb and Cameron have also had a busy spring with band.  They went to a Jazz Band festival at Coe College, where they did an AWESOME job!  They played in the combo band for the Show Choir, and attended a contest for that, too.  And they performed at the Parade of Bands this week as well.  I have no pictures of the Jazz band (when my friend Julie emails them to me, I'll add them:-)  or the show choir combo.  And I only have one (not so good!) photo from the High School parade of bands, as the High school played their piece in the dark!

Yummy, Yummy Bagels

I took advantage of a no school day (Go COUGARS!  Our boys basketball team is playing at State today, so we had no school) to spend some time in the kitchen.  My e-friend Kim mentioned last week that she made bagels and commented on how delicious they were and how EASY it was to make them.  I decided to attempt it.  They really are easy.  Ethan was impressed, and after Ron ate his, he said "I think this is the best bagel I've ever eaten!"  So...I'll be doing this again!

This first time, I just made plain bagels.  They were delicious and, as I said, easy!  Next time I might try to make some onion or poppy seed or something, for variety (Ethan requested blueberry, but I'm not sure how to do that!)

Kim led me to the blog "Pennies on a Platter" where I got the recipe.  I followed it exactly.  I just have to work on getting them to not be "wrinkled"  Ethan asked why mine were wrinkled and the ones from the store are smooth.  I said "I added love to mine and that made them wrinkly.  They leave that out of the store bought ones".  Grin. But I do want to figure out how to make them smooth.  Other than that...perfect!  I doubled the recipe and made 24.  They are pretty much your "normal" size.

BAGELS

1 tbsp active dry yeast
1 tbsp sugar
1 3/4 cups water, warm (100-110F)
4-5 cups bread flour (not all purpose)
1 tbsp salt
1 egg, for egg wash

Optional Seasonings:
Poppy Seeds
Onion Powder (I used chives because I didn’t have this on hand)
Caraway
Sesame Seeds
Kosher Salt

In a large bowl (or the bowl of a stand mixer) combine yeast, sugar and water. Let stand for 5 minutes, then stir in flour and salt. Mix dough thoroughly until it comes together in a large ball, pulling away from the sides of the bowl. Add an additional tablespoon of flour or water, if needed.

If kneading by hand, turn dough out onto a lightly floured surface and knead until very smooth and elastic, about 10 minutes. If using a stand mixer, knead dough with the dough hook until elastic, about 8 minutes on a low speed. Place dough in a lightly greased bowl, cover with plastic wrap and let rise for 1 hour, or until doubled in size.

When dough has risen, turn the dough out onto a very lightly floured surface and divide into 8 equal pieces (first quarters, then halves). Shape each piece into a tight ball, pinching the corners together at the bottom of the dough. When all the balls are shaped, let the dough rest for 30 minutes covered with a clean dish towel.

Once dough balls have rested, the bagel shape can be formed. Using your fingers, poke a hole through the center of each dough ball. Stretch out the dough into a ring with your fingers and be sure to make the hole a little larger than you want the finished bagel to have, as it will shrink slightly while the bagel is expanding during the baking process. Let bagels rest for about 10 minutes.

Meanwhile, bring a large pot of water to a gentle boil and preheat the oven to 400F. (I used a deep dish skillet because it’s wider.)  Line a baking sheet with paper towels and another baking sheet with parchment paper sprinkled with cornmeal.

Working four at a time, drop the bagels carefully into the boiling water. Boil for 2 minutes on each side. Using a slotted spoon or strainer, transfer bagels to the paper towels to drain for a moment, then place on the parchment-lined baking sheet. Repeat process with remaining bagels.

Brush boiled bagels with lightly beaten egg (a pastry brush is a good tool for this) and sprinkle with seasonings. Bake for 24 minutes, or until golden brown.  Cool completely on a wire rack (bagel will soften slightly as it cools).  Slice and toast to serve.

Happy (belated) Birthday, Cameron!

Cameron turned 16 on Feb 23.  How time flies!  It seems like yesterday that he was just a toddlin' around with his curly hair in a mop all over his head (well...some things haven't changed, LOL) 

Cameron has a sense of humor that just makes us laugh much of the time.  Just yesterday we went to West Music, and when surrounded by all these amazingly wonderful musical instruments...what did Cameron walk out the door with?  A $.60 kazoo!  And...he played it all afternoon...all the way home from Waterloo.  He had us all in stitches! 

Here are some pictures from his birthday!  (Yes...his mother DOES tell him to comb his hair, but...how many 16 year old kids do you know that listen to their mother suggestions?!)

A big thanks to Grandma Marge for the birthday cake!  I had conferences until 7 that night, and had no time to bake!  But never fear...Grandma Marge came through with a delicious chocolate cake!

I didn't have 16 candles, so I took the 13 that was in the drawer, and added 3 candles.  Cameron thought I was a genius to think of that!  (not really, but hey...it's my blog, so I can make it seem as if my kids appreciate me, right?)

Where have I been?

OK, so I've been gently nudged by several people lately.  I haven't posted here in a MONTH, and for some reason, folks were getting tired of reading about ice cream sundaes for Sunday dinner!  I can't imagine why that would get old after only a month!  LOL.

Ron and I and Rachel and Ethan spent a 4 day weekend (Valentine's Day weekend) in Missouri with our friends Erik and Kelly and their boys.  We spent a lot of hours painting the walls of their cabin on Friday, Saturday and Sunday.  We found plenty of time to also enjoy some wonderful meals, lots and lots of laughter, sangria and gin and tonics, and we even got a few hours of sleep in there, too.  We're so thankful for great friends like that.  A true blessing from God!

The rest of the month was filled with pep band and jazz band concerts and contests,  meetings, parent/teacher conferences, basketball games (The Cougars have won some incredibly tough basketball games and are headed to STATE on Tuesday!!  Go Cougars!), and...of course, Ash Wednesday marked the beginning of Lent and all that goes with that.

Ice Cream Sundae Sunday!

The kids love it when they ask "what's for supper?" and my response is "Ice Cream Sundaes!"  (Aubri...have you converted Phil to accepting this for a Sunday evening meal yet?...we think of him EVERY time we have Sundaes for dinner!)

Tonight I went all out and made homemade hot fudge sauce.  I'll never go back to store bought fudge sauce...this stuff is so yummy and very easy to make!

Hot Fudge Sauce

  • 1 1/2 cups granulated sugar
  • 1/2 cup brown sugar, packed
  • 3/4 cup cocoa
  • 1/4 cup flour
  • 1/2 t. salt (I often omit this)
  • 1 can evaporated milk
  • 1 cup water
  • 2 T. butter
  • 2 t. vanilla

Combine sugar, cocoa, flour and salt in saucepan.  Add milk, water and butter.  Cook over medium heat, stirring constantly until boiling.  Cook for 5 more minutes.  Remove from heat and cool slightly.  Stir in vanilla.  Serve over ice cream.

Welcome to our family

Lily and Lucy! 

Ethan's hamster Nippy died an untimely death shortly before Christmas.   (Ron found him in the middle of the kitchen floor early one morning, and an EXTREMELY guilty looking yellow lab sitting not too far away...sad but true!)  Ethan asked for hamsters for Christmas, so he got a gift certificate to PetSmart, with enough on it to cover the cost of two hamsters.

He and I traveled to PetSmart a couple of weeks ago so he could pick out his new friends.  He had so much fun looking at the hamsters and studying them and learning the difference between the different breeds of hamsters.  He'd at first wanted dwarf hamsters, but after learning that they are SMALL and REALLY fast, he decided to go with "Winter White Hammys"

Enter Lily and Lucy.  They are SOOO cute and active.  They love to stand on their hind legs and peek out at us from their cages!  Ethan is working hard to get them used to his scent so he can hold them without them biting him.  It is getting better, but he still gets bit once in a while.  It hurts, but he's being a tough guy about it.  He's been putting a bit of food in his hands and they are both willing to crawl into his hand to eat it.  Today, for the first time, Lily crawled into his hand without food in there first!  Progress!

Oh, my gosh...isn't she just so CUTE????  Everyone...meet Lily (sorry Phil and Aubri...Ethan did NOT name her after your Lily...at least...I'm pretty sure he didn't, LOL)

We watched her work and work to crack that sunflower seed open to get to the meat inside.  Her little paws just hold so tightly to things...it's fun to watch her work!

Everyone....meet Lucy.  She's not quite as tame as Lily just yet, but she's getting there!  This is the one that bites Ethan the most.  He tries hard to be "manly" about it and not cry, but dang...that does HURT!  She's made him bleed a couple of times!
